Hello how are you all this evening? I actually don't know if anyone takes the time to read these but if you do thank you.
so behind the baking I thought I'd share a little bit about where it all began.......... If I remember. I was young and had a dream in life to bake for a living, the smell was just intoxicating and making something out of nothing just gave me a buzz. I remeber actually sitting and watching cakes rise in the oven once, with a massive smile on my face to me it's where my heart laid, in the rise of 12 cupcakes with a perfect shape to them. My happy place.
I was very lucky my mum baked with me when I was younger, she must of saw something in me then because my parents support has always been amazing (not always good but that's life), as you would all guess my favourite subject at school was cooking, I use to sit on the teachers floor doing work out of class time, yes I was that kid. But I got my only A+ in cooking so I must of been ok.
Then I went onto collage and well I meet some amazing lectures who helped shape me into what I am today (collage days will come at a later date).
i guess today I want to remember where it all began for me, my journey has not been an easy one and it's had plenty of ups and downs but who's life hasn't?
So for me it began when I was a kid baking with my mum, memories that I don't really remeber anymore but I know that it happened. All I remeber is butterfly cakes. They use to be my favourite.
We all have them first memories of what makes us happy, what pushes us to see and use the greatness we all have inside of us. I'm Lucky enough I get to walk into my dream every day, it isn't always easy but the hard days make me work even harder to grow as a person and to help push the business forward.
Anyway im tired and probably rambling on. i will be back tomorrow because I have some cakes to share with you all :) x
I know I promised a daily blog but the week has been extremely busy I've barley had time to do anything apart from work. But I am not complaining.
So I'm asking for some help........... who has some gluten free ideas? If you put some ideas my way what ever I make I'm happy to share the recipes with you.
So what Have I been up to this week? Well its been crazy busy which is amazing, I love it. Just so much that needs to be sorted and not much time to do it all. I now have 3 working ovens again thanks to my amazing neighbour who come and wired the new oven in for me Saturday, 😃 looking forward to using that this week. I've recently taken on some cafes to supply cakes to which is something I've wanted to start doing for a long time.............. Just lots and lots going on. I will try and report to you more this week and share some random stuff with you all.

Afternoon everyone.... This is the tofu cake I mentioned yesterday. See what you think, it was made For Vegans.
55g margarine 115g digestive biscuits (vegan biscuits if needed) 55g chopped dates 4 tablespoons lemon juice 3 tablespoons water 350g firm tofu 150ml apple juice 1 banana crushed 1 teaspoon vanilla essence
Method: 1. Lightly grease a 7" round tin and pre heat the oven to 180 degrees Celcius. 2. Crush down the biscuits and melt the butter. Add the two together and throughly mix. Press into prepared Tins 3. Put the chopped dates, lemon juices and water in a pan bring it to the boil and allow the mix to simmer for 5 minutes. Mash the dates roughly. 4. Place the tofu, apple juice, banana, vanilla essence and date mixture into a food processor and mix into a smooth purée. Pour the mix onto the biscuit base and bake for 30-40 minutes until golden brown.
Chill tofu cake before serving.
Recipe came from an old book I have laying around called puddings.
Now I'm back to work in finding it hard to keep up. Today was a busy day, I managed to pull the whole of my stock room out and reorganise it, so feeling super proud of myself 😃👍. A Freind of mine stopped by and made a tofu cheese cake for her family. They are vegans. I've atrached a photo. I didn't get a slice but honestly it isn't really my thing anyway.

Im trying my hardest to stay stress free and relaxed. Back to reality tomorrow. But for now I'm still by the sea side and still poorly!!!!! Fingers crossed I'm better tomorrow.
Im not really good at knowing what to write and know what people want to read about. Im not baking away today so havnt got any baking to talk about. Kinda glad I'm not baking as this hot weather is destroying me 😞.
I'm about to start on my catalogue for the shop with all the different style of cakes I've done over the last 3 years. Will be a bit of a trip down memory lane I think.
Decided to share with you all today something different I have done over the last couple months. Party bags.......... containing a personalised biscuit, popcorn and sweets.
Today I'm writing this from the sunny sea side and its still 26 degrees out. Not been feeling myself and a bit poorly but managed to spend some time at the beach with my family and the dog. :) she loved it. spent most of the afternoon on the sofa in and out of sleep. Trying to shift this cold I have.
so yesterday was busy but my main cake of the day was a 3 tier frozen cake it lights up and got an amazing reaction at the party 😃👍. When I delivered it the birthday girls face lit up. It was priceless. I will see if I can upload the Video to this post.
I have had a positive response all day from Twitter / Facebook / Instagram.
couldn't add a Video so added a couple pictures instead.
so my evening plans are a couple hours in the arcade and a night of updating my diary which is looking extremely busy. 😃👍.
I will share some more cakes with you tomorrow I don't want to spoil you all in one post.

wow I've managed two days in a row. This time a bit earlier then yesterday. I've managed to take a 5 minute coffee break. What a busy morning!!! I forgot I can't share the cakes with you all until tomorrow so until then I've attached a picture of a cake that went out in the week. 2 cakes for one birthday wasn't he lucky. Some of us don't even get 1 cake. I'm a bit jealous, are you? It was a record player with Galway Girl record on it I only realised when I put the record into Google that the song was from Ps I love you (obviously the song was way out before then but I know it from that).
While the weather is nice I'm planning on an escape to the sea side, so once I finish work that's where I'm heading. Have any of you got plans for the lovely weather ? I will still be working. It's the perks of running your own business it becomes your life. I'm lucky I love what I do.
